Tandoori Lamb Feathers

Ingredients

– Feather meat: 1 kg (lamb)
– Black pepper: half a teaspoon (ground)
– Garlic paste: a tablespoon (ready-made)
– Ginger paste: a tablespoon (ready-made)
– Malt vinegar: 3 tablespoons
– A brick : 3 tablespoons
– Salt: three-quarters of a tablespoon
– Red hot allspice: half a tablespoon (powder)
– Gram masala spices: half a tablespoon
– Corn oil: 5 tablespoons

Direction:

1. Mix salt, black pepper, garlic paste, and ginger together. Season the meat with the mentioned mixture, and leave it aside for half an hour.

2. Pour the corn oil into a bowl (keeping a little of it aside), add the labneh, the”garam masala” and chili powder, mix the mentioned ingredients well, then put the meat feathers in the mentioned mixture, grease their sides well so that they absorb the mixture, and leave in the refrigerator for 24 hours.

3. Remove the meat from the refrigerator, set it aside to defrost it, then spread it on a tray, and wrap it in the tin. Roast the meat (preferably on charcoal), for 10 minutes, then remove the tray from the heat and set aside (without removing the tin from it).

4. Remove the tin, pour a little corn oil on the meat, return it to the embers fire without packaging, and leave it to Brown for about 8 minutes.

Preparation Method:

  1. Heat the butter and oil in a wide skillet over a fire.
  2. Add the meat, season with salt and pepper, and stir the meat over high heat for 3 minutes until brown.
  3. Reduce the heat, add the onion, and green pepper, and stir until the meat is tender and the onion and pepper are soft.
  4. Spread the mixture in the baguette and spread the cheese slices on top.
  5. Heat the sandwich on the grill until toasted, melt the cheese and serve hot.

Bread kofta

– Veal: half a kilo
– Tomatoes: 2 pieces (finely chopped)
– Olive oil: a tablespoon
– Vinegar: a teaspoon
– Vegetable margarine: a teaspoon
– Onions: 2 tbsp (chopped)
– Garlic: 3 cloves (mashed)
– Green hot pepper: Horn (chopped)
– Mixed spices: half a teaspoon
– Cinnamon: half a teaspoon
– Cardamom: half a teaspoon
– Black pepper: half a teaspoon
– Salt: a teaspoon
– Arabic bread: as needed

Direction:

  1. In a deep bowl, put all the ingredients, and mix thoroughly so that they interfere with each other.
  2. Open the pita bread on one end with a knife, then stuff it with an amount of meat mixture.
  3. Preheat the grill and place the Arais in it for about 6-8 minutes until the meat is tender, then serve the Arais hot.

Lamb kebab

Ingredients

Lamb : 500 grams (minced)
– Onions : 1 (large / chopped)
– Margarine: 3 tablespoons
– Salt : a teaspoon
– Black pepper : a teaspoon
– Red hot pepper : a teaspoon
– Garlic powder : a teaspoon
– Cumin: a teaspoon
– Paprika : a teaspoon
– Coriander : half a teaspoon (ground)

Direction:

  1. Put all the ingredients except margarine in a bowl.
  2. Mix well with your hands until the ingredients are combined.
  3. Make about 10 small balls from the mixture and then flatten them by pressing them with your hand.
  4. Heat the ghee in a frying pan and stir the kebab discs in it until cooked on both sides well and serve hot.
